Black Bean Quinoa Salad

Black Bean Quinoa Salad
Prep Time:  10 minutes l Cooking Time:  20 minutes l Yields:  4 servings
Ingredients:
**Use Organic ingredients when possible.
1 red bell pepper, seeded and diced
1/2 cup diced cucumber
1/2 cup diced red onion
1/2 cup chopped cilantro
1 15-oz can black beans, rinsed and drained
2 cups vegetable broth
1 cup quinoa, rinsed and drained
Salt and pepper, to taste
Dressing:
1 clove garlic, minced
1/2 teaspoon honey
1-2 finely diced jalapeo pepper(s), optional
2 Tablespoons fresh lime juice
1 Tablespoon olive oil
Directions:
  • Using a fine mesh strainer, give quinoa a quick rinse under running water.
  • In a large pot, bring the vegetable broth to a boil.  Stir in rinsed quinoa and cook until broth is evaporated and quinoa is tender, about 20 minutes.  Pour quinoa into a medium bowl and fluff with a fork.  Set aside.
  • In a large bowl, whisk together garlic, honey, jalapeos, lime juice, and olive oil.   Add remaining ingredients and toss until combined.  Season with salt and pepper, to taste.  Serve warm or cold, by itself or over greens.
