Spiced Apple Walnut Baked Oatmeal

Here’s another great recipe from Jennifer Smigelski of WellThy Families
The underlying basic recipe (taking out the applesauce, apples, spices and nuts) can be flavored an infinite number of ways.  Mix it up – try different fresh, canned, dried fruits, or thawed frozen nuts and spices!  As always, be sure to use organic ingredients.
Prep Time:  20 minutes
Cooking Time:  30 minutes
Yields:  8 servings
Ingredients:
1/3 cup canola oil (or try coconut oil)
3 Tablespoons brown sugar
3 eggs
4 1/2 cups Old Fashioned Oats
1 Tablespoon baking powder
3/4 teaspoon salt
2 cups milk (dairy or dairy alternative)
1/2 cup applesauce
2 medium apples cored and chopped
2 teaspoons apple pie spice (or cinnamon)
1/2 cup walnuts, finely chopped
Directions:  
  • Preheat oven to 350 F.
  • Cream oil, sugar and eggs.
  • Add remaining ingredients.
  • Poor into greased 8×11 glass baking dish.
  • Bake for 30 minutes.
