Spinach Quiche

I love quiche.  It can be eaten hot or cold.  You can have it for breakfast, lunch or dinner.  And if you aren’t making the crust from scratch it is pretty easy to prepare.  Wholly Wholesome’s Organic Spelt crust is my favorite!  I put the quiche together on Sundays (when daddy is around to help with the kids),  put it in the freezer and cook it later in the week.


  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 10-ounce package frozen chopped spinach
  • 1T fresh thyme
  • 1 9-inch Wholly Wholesome’s Organic Spelt crust
  • 1/2 cup Monterey Jack or mozzarella cheese
  • 1/2 cup  grated Romano cheese
  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/8 teaspoon ground nutmeg


Melt butter in heavy medium skillet over medium-high heat. Add onion and sauté until translucent.  Add spinach and thyme.  Season with salt & pepper.  Sprinkle Jack cheese over bottom of crust. Top with spinach mixture. Beat eggs, cottage cheese, Romano cheese.  Pour over spinach and sprinkle with nutmeg.  Bake at 375 F until filling is set, about 50 minutes.
